NTFS partitions: how to disable access

In my dual boot system I've three Windows partitions:
1) C (NTFS) where all Windows programs are installed
2) D (NTFS) where I save all my data
3) E (FAT32) used to exchange data between both OS

I need to prevent access to C and D to avoid writing and reading too. I want to allow read and write only E.

Now in my Rosa 2012.1 64 bit all partitions are detected and I can mount them manually.
I would prefer C and D be not visible. If not possible, or not easy, I need they cannot mounted manually.

It seems there is no way to solve my problem using GUI. Is there a way modifying /etc/fstab? This is mine:
